ArcWest Architects assisted the new owner for the planning and design to retrofit a Le Peep restaurant in an existing commercial stand alone building. The New Breakfast / Lunch / Special Event Restaurant will open in Louisville soon. The recently completed restaurant design, engineering and permit documents have been submitted. A building permit has been issued allowing the construction of the project to proceed. The goal is to be open for the 2012 holiday season.
This retrofit project required the near total removal of all existing interior components with the exception of the electrical room, commercial exhaust hoods and the main walk in freezer and refrigerator. With these key locations and the general location for dining established, the commercial kitchen layout was conceived though uniting the business owner’s preferences, the experience of fellow operators, and the basic functional requirements of the type of food being prepared. Ultimately this resulted in a commercial kitchen that segregates each process flow and prevents excessive cross traffic in the day to day operation.
The owner envisions this establishment set apart from other commercial restaurant designs by the inclusion of a gourmet coffee or barista bar as a key element, with the intent of drawing the coffee shop clientele as well as the casual breakfast diner.
There will be more to come as the construction of this commercial restaurant and kitchen progresses and the final design is realized.
